Ingredients
- olive oil 60 g

- lemon finely grated zest only ½
- chicken breasts skinless, butterflied (sliced through horizontally almost to the edge then opened out) 3

- courgette cut in pieces (approx. 150 g) 1
- fine sea salt plus extra to taste 1 pinch
- ground black pepper plus extra to taste 1 pinch

- couscous 250 g
- frozen peas 50 g
- pitted black olives 50 g
- red peppers diced 50 g
- spring onions sliced (1 cm) 25 g

Instructions
- Place olive oil, oregano and lemon zest in mixing bowl then mix 5 sec/speed 5. Place butterflied chicken breasts between two large pieces of cling film and flatten with a rolling pin. Place chicken in a dish and pour over marinade. Rinse mixing bowl.
- Place a bowl on mixing bowl lid and weigh in yoghurt. Remove bowl and set aside.
- Place courgette in mixing bowl and chop Turbo/0.5 sec/1-2 times. Tip out into a muslin cloth and squeeze out liquid. Stir squeezed courgette into yoghurt and adjust seasoning to taste. Set tzatziki aside in fridge.
- Place 500 g water in mixing bowl. Preheat grill to 230°C.
- Line Varoma dish with enough baking paper to come 2-3 cm up the sides, then place into position. Weigh in couscous, peas, olives, red peppers and spring onions. Sprinkle 75 g water over couscous and vegetables then stir with a fork to moisten. Cover Varoma then steam 10 min/Varoma/speed 1. Sprinkle another 50 g water over couscous and vegetables and stir well with a fork. Cover Varoma and steam again 10 min/Varoma/speed 1. Meanwhile, grill marinated chicken for 5 minutes (230°C) on each side until browned.
- Slice grilled chicken into strips and serve with couscous and tzatziki on the side.
Tips
- To butterfly a chicken breast, use a sharp knife to slice into one side of the breast, starting at the thicker end and ending at the thin point. Open out the breast so that it resembles a butterfly.
- The method in the recipe produces a lighter, steamed couscous. If you prefer, you can soak the couscous in 250 g water for 5 minutes then steam as directed in the recipe.
